Post-winter clean eating.
Had your fill of heavier foods after the winter? As Spring shows up— its a great time to start cleansing your body and your diet.
Some people might think– now is a great time for a juice cleanse! But for me, the middle of winter is not the time I want to be drinking lots of juice. Its just too cold out there and I need foods that will warm me up. You can however clean up your meals by eating liver cleansing foods with simple ingredients.
This meal is simple, filling and great for the body after a winter of “I’ve stuffed myself with meats, cheeses and heavy meals” for the past few months. It has great antioxidant ingredients like kale and cauliflower– both rich in vitamins and aid in reducing inflammation (especially after all those new years cocktails!). Kale also is a great detoxifying veggie for its high fiber content that help clean out the liver. Onion and garlic are also great antioxidants and also has immune-boosting properties. The lemon juice has a lot of Vitamin C which is another way to boost that immune system this time of year.
Bunch of kaleIngredients:
- 1 head cauliflower
- 1 clove garlic
- 1/2 onion
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- Wild rice (pictured) or your favorite grain
Use a tablespoon of olive oil to grease frying pan. Chop the onion an garlic and add to pan (save some onion on side). Once softened, add in chopped up cauliflower and then kale. On the side mix 2 tbsp olive oil, 2 tbsp apple cider vinegar, juice from a lemon, remaining onion and mix. Add to your stir fry and let it get absorbed by the veggies.
Once cooked, place veggies on top of your wild rice — and maybe squeeze a bit more lemon juice on top for extra flavor.
This is a very simple meal — to cook and in terms of ingredients. Clear away all those desserts, wines and cheeses out of your system with clean foods. Take a deep breath before your meal– appreciate all that was good in the past year and chew slowly! Happy new year!
