lentil veggie soup

It is soup season!

I love soup and it is a great way to get a lot of your veggies into one delicious serving. Plus, when you add in lentils it provides you with a ton of protein as they have the third highest protein content by weight of the legume family.

As the nights have gotten much cooler I immediately crave soup. I decided to take some of the elements of chicken soup and add more veggies and lentils into it. It is a hearty soup that really fills you up– try it out!

Ingredients:

  • 1/2 onion
  • 2 large carrots
  • 3 stalks celery
  • 1 1/2 quart chicken or veggie broth
  • 1 cup of lentils (any color)
  • Small bunch of swiss chard
  • Olive oil

Directions:

In a medium sized pot, pour in 2-3 TBSP of olive oil and sauté the chopped up onion. Chop up the carrots and celery into small pieces and add to the onion once it has softened. Add in the broth and bring to a boil. Once it boils you can add in the lentils. As the lentils start to softy, add in the swiss chard (torn into small pieces).

Let simmer for about 10-15 minutes. Time may vary depending on the size of lentils you get– so make sure to test as you go.
