cashew cream instead of sour cream. (dairy free)
If you have any sensitivity to dairy or are vegan/starting to lean vegan, cashew cream is a fabulous substitute for things like sour cream, cheese and other similar textured spreads. Even if you aren’t sensitive to dairy—lessening the amount you have in your diet can really improve your health in a number of ways. Dairy is really high in saturated fat (especially cheeses) and is linked to heart disease. There also is no real proof that it can improve bone health or prevent fractures. So, if you tend to eat a lot of dairy maybe now is a good time to try substituting something else into your diet.
Making cashew cream is so simple—just a few ingredients:
- 1 cup raw cashews
- 1/2 cup water
- 1 tsp of apple cider vinegar
- 1/2 tsp salt
- 1/2 lemon juice
Soak the cashews in water over night. Drain the water and add fresh water and the rest of the ingredients. Put in blender and mix until smooth. The longer you blend the thicker and smoother it will get.
There are a number of ways to use cashew cream—I like to use instead of sour cream on dishes like taco’s and mexican dishes.
